Powermeal A Day Orange

Today’s JUNE POWERMEAL A DAY topic is
ORANGE

Some ways that I love to eat ORANGE FOODS are…

my clean “sweet potato pie
especially with my vanilla power puff chia omelet!


*Stuffing orange bell peppers with my
Toasted Walnut & Caper Tuna Salad

Incorporating HUGE carrots into my POWERROLLS

*Or making FRIED YAMS
by cutting up a yam and frying in coconut oil
on medium-high heat until golden brown

But I think my favorite ORANGE food is
PUMPKIN!

just like in my

[Benefits of Pumpkin]

You can tell by its bright color that it’s going to be going to be good for you.

Not only is pumpkin loaded with vitamin A and antioxidant carotenoids,
particularly alpha and beta-carotenes, it’s a good source of vitamins C, K, and E,
and lots of minerals, including magnesium, potassium, and iron.

Half a cup of canned pumpkin has
6.5 grams of effective carbohydrate
(The amount of carbohydrate in a food
that the body is able to utilize for energy.)
and
3.5 grams of fiber.

The seeds are also worth latching on to.
Pumpkin seeds, also called pepitas, are loaded with minerals,
seem to have an anti-inflammatory effect,
and may even help protect against prostate cancer and osteoporosis.

A quarter cup has about
5 grams of effective carb and 1.5 grams of fiber.

Now one of my most creative ways
to enjoy this ingredient

is take my
PUMPKIN BUTTER

& mix in some toasted pepitas & make
HARD BOILED PUMPKIN EGGS

& don’t knock it til’ you try it!! Winking smile
I added a sprinkle of cinnamon afterwards!
